Completed in 1983, the "Jingwu Tunnel" was excavated and crafted entirely by hand by National Army soldiers working in three rotating shifts. The natural granite geological layer combined with Kinmen's island climate creates a tunnel environment with perfectly suited natural temperature and humidity. Within this natural granite wine cellar, Kinmen Kaoliang Liquor slowly breathes, refining and aging the body of the liquid to brew high-quality, premium liquor with a unique fragrance, mellowness, sweetness, and crispness. In 2016, the Kinmen Distillery began constructing large stainless steel wine vats and introducing modernized equipment to increase storage capacity, enhance liquor quality, and prolong the aging process, thereby maximizing storage efficiency.
To celebrate the 70th anniversary of the Kinmen Distillery, the company unveiled the mysterious veil of this "wine cellar" to the public for the first time at the end of 2022, opening it for tours. Centered around the theme "Cellar of Light Journey," the exhibition features five main guided tour stations that allow visitors to travel through time and savor the flavors of Kaoliang through a five-sensory experience encompassing smell, taste, sight, and sound. The five stations include the Excavation Ceremony, Kaoliang Micro-Journey, Distiller's Craftsmanship, Cellar Inheritance, and Liquor Lovers' Pop-up. Throughout the journey, in addition to learning about the history of the Kinmen Distillery, visitors can also taste unique raw liquor, aged Kaoliang liquor, and special cocktails crafted with Kinmen Kaoliang liquor as the base.
